Baked Ginger Soy Salmon (Slow Cooker Club Exclusive)

Ingredients

  • 2 salmon fillets
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 1 tsp honey
  • 2 tbsp soy sauce
  • 50ml water

Garnish

  • Lime slices

  • 1 tsp sesame seeds

  • 1 tsp fresh red chilli, finely chopped

  • 1 tbsp fresh coriander, chopped


Method

  1. Line the slow cooker with parchment paper, making sure it covers the bottom and sides. Pour 50ml of water underneath the parchment to help steam the salmon and prevent sticking.
  2. Mix the garlic, ginger, honey, soy sauce, and water to create the marinade. Season the salmon fillets with salt and pepper, then place them on the parchment paper. Pour the marinade over the salmon, ensuring they are well coated. Cook on high for 1 hour until the salmon is cooked through and flakes easily with a fork.
  3. Once done, garnish the salmon with lime slices, sesame seeds, fresh red chilli, and chopped coriander. And serve with fluffy white rice, enjoy.
