Slow Cooker Beef Rendang Recipe

This is my easy slow cooker version of Beef Rendang, my version is a short cut version vs the tradtional by using the pre made Beef Rendang paste. This recipe is up there in one of my favourite slow cooker recipes, its creamy its fragrant and honestly tastes delicious. A must try, lets go:
Ingredients:
- 2 medium onions sliced thinly
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- 1 red chilli chopped 5 (add more chilli if you like it extra hot)
- 700g stewing beef or beef shin
- 4 dried or fresh lime leaves
- 3 cloves
- 3 cardamon pods
- 3 star anise
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- Juice of half a lime
- 3 tbsp beef Rendang Paste (available in Sainsbury's or any asian supermarket)
- 1 400ml coconut milk
- 125ml beef stock
- 1 tsp olive oil
- 1 tbsp brown sugar
- 1 tbsp cornflour
Method:
- To a medium heat pan add 1 tsp olive oil and brown off your beef with 1 tbsp cornflour.
- Add the browned beef to the slow cooker along with the rest of the ingredients and cook on high for 4 hours or low for 6-8 hours. Serve with fluffy white rice and fresh coriander and tuck in, enjoy!
