Slow Cooker Smokey Cowboy Bean & Sausage Stew (Slow Cooker Club Exclusive)

Ingredients

  • 6 Cumberland pork sausages 
  • 3 mixed peppers, chopped
  • 1 tbsp smoked paprika
  • 3 garlic cloves, minced
  • 400g can baked beans
  • 400g can butter beans, drained
  • 400g can chopped tomatoes
  • 1 tbsp BBQ sauce

Method

  1. In a medium heat pan, brown the sausages for 3-5 minutes. This step is optional, but it adds a lot of flavour to the dish! 
  2. Once browned, add the sausages and the rest of the ingredients to the slow cooker. Cook on high for 3 hours or on low for 6 hours until the sausages are cooked through and the flavours meld together.
  3. Garnish with fresh parsley and serve with crusty bread. Enjoy!
