Cheesy Beef Brisket Sliders (Slow Cooker Club Exclusive)

Ingredients

  • 800g beef brisket (trim excess fat)
  • 4 garlic cloves, minced 
  • 1 tbsp smoked paprika 
  • 1 tbsp tomato paste
  • 1 tbsp brown sugar
  • 1 tsp Dijon mustard
  • 100ml beef stock 
  • 1 tbsp Worcestershire sauce 
  • 6 lower-calorie mini brioche buns (approx. 120 calories each) 
  • 6 slices reduced-fat cheddar (approx. 40 calories per slice)

Butter Garlic Baste

  • 1/2 tbsp butter 

  • 1/2 tsp minced garlic 

  • 1/2 tsp fresh parsley, melted

Caramelised Onions

  • 2 onions, sliced 

    1/2 tsp butter 


Method

  1. In the slow cooker, mix together garlic, smoked paprika, tomato paste, brown sugar, Dijon mustard, beef stock, and Worcestershire. Add the beef brisket and coat well. Cook on low for 8 hours, until the brisket is tender and pulls apart easily.
  2. While the brisket cooks, caramelise the onions by heating 1/2 tsp butter and a dash of water in a pan. Add sliced onions and cook on low heat until soft and golden, about 20-30 minutes. 
  3. Once the brisket is ready, layer 1 slice of reduced-fat cheddar on the bottom half of each brioche bun. Add shredded brisket on top, followed by caramelised onions. Place the top of the bun on, baste with the garlic butter, and bake at 180°C for 10-15 minutes until the cheese melts. Serve and enjoy!
