

Ingredients
- 600g chicken thighs
- 400g tinned chopped
- tomatoes
- 1 red chili, chopped
- 1 onion, diced
- 1 tbsp minced garlic
- 1 red bell pepper, sliced
- 1 tbsp mixed herbs
- 2 tbsp smoked paprika
- 1 tbsp cayenne pepper
- 50ml chicken stock
- 80ml single cream
Method
- Place the chicken in the slow cooker along with chopped tomatoes, red chili, onion, garlic, bell pepper, mixed herbs, smoked paprika, cayenne pepper, and chicken stock. Mix well to combine and season well.
- Cover and cook on high for 3-4 hours or on low for 6–7 hours.
- 15 minutes before serving, stir in the single cream and let it heat through. Serve with a side of buttery mashed potatoes and fresh greens, enjoy!
