Slow Cooker juicy barbecue ribs what more is there to love? So easy to prepare, this recipe will be an absolute crowd pleaser this festive season.

Ingredients:

  • 1.4kg pork belly ribs (sustainably sourced where possible)
  • 1 bottle barbecue sauce 350g (I used for this recipe I recommend)
  • 2 bay leaves
  • 1 tsp coriander seeds
  • 1 tsp mustard seeds
  • 200ml water

Method:

  • Add all your ingredients to your slow cooker, add your barbecue sauce (leaving 1-2 tbsp for basting later), water and season well. Place on low for 8-9 hours until tender but not completely falling off the bone.
  • Remove ribs from the slow cooker using tongs ensuring that they don’t fall apart, baste with the remaining barbecue sauce and place within a 200c oven for 15-20 mins until crispy on the outside or place on the barbecue itself. Serve with a tangy salad and potato salad and enjoy.
