

Ingredients
- 1 large onion chopped
- 600g chicken thighs chopped
- 1 tbsp minced ginger
- 1 tbsp minced garlic
- 3 tbsp smooth peanut butter
- 400g full fat coconut milk
- Juice of 1/2 lime
- 1 chicken stock cube crumbled
- 1 tbsp soy sauce
- 1 tbsp curry powder
- 1 tsp chilli powder
- 1 tsp sugar
- 1 red chilli
Garnish
- Fresh coriander
- 1 tsp crushed peanuts
Method
- Add all of the ingredients to the slow cooker, season well and mix together in your slow cooker.
- Cook on high for 4 hours or on low for 8 hours.
- Garnish with coriander, chilli and crumbled peanuts and tuck in, enjoy!
