Creamy Chicken Satay Curry (Slow Cooker Club Exclusive)

Ingredients

  • 1 large onion chopped 
  • 600g chicken thighs chopped 
  • 1 tbsp minced ginger 
  • 1 tbsp minced garlic 
  • 3 tbsp smooth peanut butter 
  • 400g full fat coconut milk 
  • Juice of 1/2 lime 
  • 1 chicken stock cube crumbled 
  • 1 tbsp soy sauce 
  • 1 tbsp curry powder 
  • 1 tsp chilli powder 
  • 1 tsp sugar 
  • 1 red chilli 

Garnish

  • Fresh coriander 
  • 1 tsp crushed peanuts 

Method

  1. Add all of the ingredients to the slow cooker, season well and mix together in your slow cooker.
  2. Cook on high for 4 hours or on low for 8 hours. 
  3. Garnish with coriander, chilli and crumbled peanuts and tuck in, enjoy!
