

Ingredients
- 600g chicken thighs
- Juice of 1 lime
- 1 tsp olive oil
- 2 tbsp fajita seasoning
- 3 mixed bell peppers, sliced
- 1 onion, sliced
- 1 tbsp minced garlic
- Mini tortillas (6)
- 2 tbsp chipotle paste
- 1 tsp honey
Method
- Add all of the ingredients into the slow cooker, mix and season well with salt and pepper.
- Cook on low for 6 hours or on high for 3 hours until the chicken is tender.
- Serve with mini tortilla, avocado, salsa and enjoy!
