

Ingredients
- 1 large onion
- 1 tbsp minced garlic
- 450g potatoes chopped
- 1 red or green chilli
- 1 tbsp minced garlic
- 4 dried or fresh lime leaves
- 3 cardamom pods
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 750g diced brown beef
- 1 tsp olive oil
- 1 tbsp cornflour
- 100ml beef stock
- 400ml full fat coconut milk
- Juice half a lime
- 3-4 tbsp massaman paste
Method
- Add 1 tsp olive oil to a pan and brown off the beef in the pan for 5 minutes with 1 tbsp cornflour.
- Add the browned beef to the slow cooker along with the rest of the ingredients, season well then cook for 4 hours on a high or 8 hours on a low.
- Serve with fresh coriander, fresh chilli and white rice, enjoy and tuck in.
