Pulled Jerk Pork (Slow Cooker Club Exclusive)

Ingredients

  • 1.5kg pork shoulder, fat trimmed 
  • 1 red chilli, finely chopped 
  • 3 tbsp jerk seasoning mix 
  • 1 tbsp minced garlic 
  • 50ml water 
  • Salt and pepper, to taste

Method

  1. Rub the pork shoulder with the jerk seasoning mix, minced garlic, and finely chopped red chilli. Season with salt and pepper, ensuring the pork is well coated with the spices.
  2. Place the seasoned pork shoulder into the slow cooker. Pour 50ml of water around the pork, cover with the lid and cook for 8 hours on low until the pork is tender and easily pulls apart. 
  3. Once done, shred the pork using two forks, mixing it back into the cooking juices for extra flavour. Serve with coconut rice and beans, a mango pineapple salsa and enjoy.
