

Ingredients
- 1.5kg pork shoulder, fat trimmed
- 1 red chilli, finely chopped
- 3 tbsp jerk seasoning mix
- 1 tbsp minced garlic
- 50ml water
- Salt and pepper, to taste
Method
- Rub the pork shoulder with the jerk seasoning mix, minced garlic, and finely chopped red chilli. Season with salt and pepper, ensuring the pork is well coated with the spices.
- Place the seasoned pork shoulder into the slow cooker. Pour 50ml of water around the pork, cover with the lid and cook for 8 hours on low until the pork is tender and easily pulls apart.
- Once done, shred the pork using two forks, mixing it back into the cooking juices for extra flavour. Serve with coconut rice and beans, a mango pineapple salsa and enjoy.
