Slow Cooker Lasagne Recipe

Ingredients

Lasagne Filling

  • 500g 5% lean beef mince

  • 1 onion, diced

  • 4 garlic cloves, minced

  • 1 carrot, grated

  • 2 bay leaves

  • 2 tbsp mixed Italian herbs

  • 50ml beef stock

  • 1 x 400g can chopped tomatoes

  • 1 tbsp tomato purée

  • Salt & pepper, to taste

To Finish

  • 4 dried lasagne sheets

  • 1 packet @Schwartz Cheddar Cheese Sauce

  • 50g lighter grated mozzarella

  • Fresh basil, to garnish

Instructions

  1. Add your base ingredients.
Into the slow cooker, add the beef mince, onion, garlic, grated carrot, bay leaves, herbs, stock, chopped tomatoes, tomato purée, and a generous pinch of salt and pepper.
  2. Cook the ragu.
Stir everything together, then cook on high for 4 hours or low for 8 hours, until the beef is tender and flavours have developed.
  3. Layer your lasagne.
One hour before serving, break up the lasagne sheets and nestle them into the ragu (no need to pre-cook). Pour over the cheddar cheese sauce and stir lightly to coat. Continue cooking for the final hour.
  4. Finish with cheese.
Ten minutes before serving, sprinkle mozzarella evenly on top. Pop the slow cooker pot (only if oven proof) under a hot grill for 5 minutes to get that golden, bubbly lasagne crust.
  5. Serve & enjoy.
Garnish with fresh basil and serve with a crisp side salad or steamed greens for the ultimate high-protein comfort meal.

Frequently Asked Questions

Can you cook lasagne in a slow cooker?

Absolutely! The slow cooker makes lasagne effortlessly tender, rich, and full of flavour — no need to pre-boil the pasta sheets.

Do the lasagne sheets need to be cooked first?

Nope — just break them up and add directly into the sauce for the last hour of cooking. They’ll soften perfectly.

Can I use white sauce instead of cheddar sauce?

Yes — you can swap the cheddar sauce for a lighter white sauce or low-fat ricotta mix for a creamy finish.

Can I freeze slow cooker lasagne?

Definitely. Cool fully, portion, and freeze for up to 3 months. Reheat in the microwave or oven until piping hot.

Is this lasagne high in protein?

Yes! Each serving packs 35g of protein and 430 calories, making it ideal for high-protein meal prep or balanced family dinners.

Can I make this vegetarian?

You can! Swap beef for Quorn mince or lentils and use vegetable stock instead of beef stock.
