Ingredients
Lasagne Filling
500g 5% lean beef mince
1 onion, diced
4 garlic cloves, minced
1 carrot, grated
2 bay leaves
2 tbsp mixed Italian herbs
50ml beef stock
1 x 400g can chopped tomatoes
1 tbsp tomato purée
Salt & pepper, to taste
To Finish
4 dried lasagne sheets
1 packet @Schwartz Cheddar Cheese Sauce
50g lighter grated mozzarella
Fresh basil, to garnish
Instructions

Add your base ingredients.
Into the slow cooker, add the beef mince, onion, garlic, grated carrot, bay leaves, herbs, stock, chopped tomatoes, tomato purée, and a generous pinch of salt and pepper. -
Cook the ragu.
Stir everything together, then cook on high for 4 hours or low for 8 hours, until the beef is tender and flavours have developed. -
Layer your lasagne.
One hour before serving, break up the lasagne sheets and nestle them into the ragu (no need to pre-cook). Pour over the cheddar cheese sauce and stir lightly to coat. Continue cooking for the final hour. -
Finish with cheese.
Ten minutes before serving, sprinkle mozzarella evenly on top. Pop the slow cooker pot (only if oven proof) under a hot grill for 5 minutes to get that golden, bubbly lasagne crust. -
Serve & enjoy.
Garnish with fresh basil and serve with a crisp side salad or steamed greens for the ultimate high-protein comfort meal.
