One Pan Cheesy Mexican Taco Rice

This is my high-protein one-pan cheesy Mexican taco rice, coming in at under 500 calories and over 35g of protein per serving. It’s packed with flavour, perfect for meal prep, and so easy to make.
Ingredients:

2 red chilies

1 large onion

4 garlic cloves

500g 5% lean beef mince

2 bell peppers

1 packet taco seasoning

1 tsp olive oil

150g dry basmati rice

500ml beef stock

60g lighter cheese
Method

Heat 1 tsp olive oil in a pan over medium heat. Add the garlic and onion, cooking until softened. Then, add the peppers, chilies, and half the taco seasoning, cooking for another 5 minutes.

Add the beef mince and the remaining taco seasoning. Season with salt and pepper, then cook for 10 minutes until browned.

Stir in the rice, coating it in the beef mixture. Pour in the beef stock, ensuring the rice is fully covered.

Reduce the heat to low, cover with a lid, and let simmer for 10–15 minutes until the stock is absorbed.

Once cooked, sprinkle over the cheese, let it melt, and serve with fresh coriander and a squeeze of lime. Enjoy.
