Delicious Spicy Sausage Truffle Pasta Recipe

Ingredients

  • 350g dried linguine

  • 450g sausages (4 large sausages), skins removed

  • 1 large onion, finely chopped

  • 1 tbsp garlic, minced

  • 1 red chilli, finely sliced

  • 200g mushrooms, sliced

  • 1 tbsp mixed herbs

  • 1 jar truffle pasta sauce

  • Salt & black pepper

  • To serve:
    Parmesan
    Chilli flakes
    Drizzle olive oil

Instructions

  • Cook the sausage
    In a medium-heat pan, crumble the sausages and cook for 10 minutes until browned. Remove and set aside.

  • Cook the vegetables
    In the same pan, add onion, garlic and chilli. Season well and cook for 10 minutes until softened. Add mushrooms and mixed herbs and cook for a further 5 minutes.

  • Cook the pasta
    Boil linguine in well-salted water until al dente. Reserve a cup of pasta water before draining.

  • Combine everything
    Return the sausage to the pan. Add cooked pasta and a splash of reserved pasta water. Pour in the truffle pasta sauce and stir until glossy and fully combined.

  • Serve
    Top with parmesan, chilli flakes and a drizzle of olive oil.
