Delicious Spicy Sausage Truffle Pasta Recipe
Ingredients
350g dried linguine
450g sausages (4 large sausages), skins removed
1 large onion, finely chopped
1 tbsp garlic, minced
1 red chilli, finely sliced
200g mushrooms, sliced
1 tbsp mixed herbs
1 jar truffle pasta sauce
Salt & black pepper
- To serve:
Parmesan
Chilli flakes
Drizzle olive oil
Instructions
Cook the sausage
In a medium-heat pan, crumble the sausages and cook for 10 minutes until browned. Remove and set aside.Cook the vegetables
In the same pan, add onion, garlic and chilli. Season well and cook for 10 minutes until softened. Add mushrooms and mixed herbs and cook for a further 5 minutes.Cook the pasta
Boil linguine in well-salted water until al dente. Reserve a cup of pasta water before draining.Combine everything
Return the sausage to the pan. Add cooked pasta and a splash of reserved pasta water. Pour in the truffle pasta sauce and stir until glossy and fully combined.Serve
Top with parmesan, chilli flakes and a drizzle of olive oil.
