Spicy Truffle Pasta

Spicy Sausage Truffle Pasta


Serves 5 | 565 calories | 21.2g protein per serving


Truffle lovers this one’s for you, my Spicy Sausage Truffle Pasta. One of my new favourite pasta recipes this is a must try comfort food recipe.


Ingredients:  

- 350g dried linguine  

- 450g sausages (4 large sausages)  

- 1 large onion  

- 1 tbsp garlic  

- 1 red chilli  

- 200g mushrooms  

- 1 tbsp mixed herbs  

- 1 jar truffle pasta sauce 


Method:

- In a medium-heat pan, add the sausages and crumble with a spoon. Cook for 10 minutes, then remove from the pan.  

- Add onions, garlic, and chilli to the pan and season well then cook for 10 minutes until softened. Add mushrooms and 1 tbsp Italian seasoning. Cook for a further 5 minutes.  

- Add linguine to salted boiling water and cook until al dente, reserving a cup of the pasta water.  

- Add the sausages back to the pan with the onion, garlic, chilli, and mushrooms. Add the cooked pasta to the pan along with a splash of the reserved pasta water. Pour in the truffle pasta sauce and stir until fully combined.  

- Serve with Parmesan, 1 tsp chilli flakes, and a drizzle of olive oil, and tuck in. Enjoy!
