Delicious Creamy Tuscan Chicken and Orzo

Ingredients

  • 6 chicken thighs

  • 1 tbsp paprika

  • 1–2 tbsp sun-dried tomatoes, chopped

  • 2 tbsp Italian mixed herbs

  • 200 g dried orzo

  • 700 ml chicken stock

  • 1 tbsp garlic, chopped

  • 1 large onion, chopped

  • 1 tsp Dijon mustard

  • 100 ml single cream

  • Handful of baby spinach

  • 1 tsp olive oil

  • Salt & black pepper, to taste

Instructions

  • Season the chicken.
    Season chicken thighs with paprika, Italian herbs, olive oil, salt and pepper.

  • Brown the chicken.
    Heat a pan and cook thighs skin-side down for 3–5 minutes until crispy.
    Flip and cook for a further 15 minutes until cooked through. Remove and set aside.

  • Build the base.
    In the same pan, sauté onion and garlic for 3–5 minutes until softened.
    Stir in the orzo.

  • Cook the orzo.
    Add chicken stock and simmer for 10 minutes, stirring occasionally.

  • Make it creamy.
    Stir in the cream, Dijon mustard and extra herbs if needed. Season to taste.

  • Finish the dish.
    Add spinach and let it wilt, then return the chicken to the pan for 2–3 minutes to warm through.

  • Serve.
    Finish with a squeeze of lemon juice, fresh basil if you like, and enjoy.
