Italian Prawn Linguine

Bursting with flavour classic authentic Italian prawn linguine

 

Italian Prawn Linguine 

Serves 2 | 560 calories and 30.3g protein per serving

Perfect date night dish, this prawn garlic and cherry tomato dish takes under 25 minutes to make and is so simple to put together. Lets go:

 

Ingredients: 

  • 300g raw king prawns 
  • 200g cherry tomatoes 
  • 1 birdseye chilli 
  • 4 garlic cloves finely chopped 
  • 2 medium onions finely chopped 
  • Juice 1 lemon and zest 
  • 200g Uncooked Linguine 
  • Handful fresh parsley 
  • 100ml white wine
  • 1 tbsp olive oil 

 

Method: 

  • Add 1 tbsp olive oil to the pan along with your onions and garlic, sauté until softened. Add cherry tomatoes and 100ml white wine, lemon juice, lemon zest and 1 red chilli to the pan, season and let the wine reduce whilst the tomatoes soften. Once softened add the prawns and cook for a further 2-3 minutes until they’re pink and cooked through. 
  • Meanwhile bring a large pot of salted water to boil then cook the linguine until al dente, drain the reserve and a cup full of the pasta water. 
  • Add pasta to the pan along with a dash of the pasta water, turn the heat off and combine everything together. Season again to taste, lay some of the prawns on top of the pasta (if you like that aesthetic look) garnish with fresh parsley, a drizzle of olive oil and some wedges of fresh lemon. Enjoy!
