Delicious ‘Heal Me’ Lemon Chicken & Orzo Soup

Ingredients

  • 2 medium carrots, diced

  • 2 small onions, diced

  • 2 celery sticks, diced

  • 4 garlic cloves, finely chopped

  • 100 g orzo

  • Handful of spinach

  • ½ lemon, juiced + zested

  • 300 g cooked shredded chicken breast

  • 1 litre chicken stock

  • 1 tbsp olive oil

  • 1 tbsp Italian seasoning

  • 1 tbsp fresh parsley, chopped

  • 1 tbsp grated parmesan

  • Salt & pepper, to taste

Instructions

  • Start the base.
    Heat olive oil in a medium pan over a medium heat.
    Add celery, onions and carrots, sprinkle over Italian seasoning, season well and sauté until softened.

  • Add the stock & orzo.
    Pour in the chicken stock and bring to a gentle simmer.
    Add the orzo, cover with a lid and cook on low for 15–20 minutes until tender.

  • Add protein & greens.
    Stir in the cooked chicken and simmer for 5–10 minutes.
    Add the spinach and parmesan and cook for a few minutes until wilted.

  • Finish & serve.
    Finish with lemon juice, zest, cracked black pepper, extra parmesan and a drizzle of olive oil if you like.
