Delicious High-Protein Crispy Chilli Beef Lettuce Cups Recipe

Ingredients

  • 500 g 5% lean beef mince

  • 1 tbsp olive oil

  • 3 tbsp soy sauce

  • 1 tsp sesame oil

  • 1 tsp fish sauce

  • 2 tbsp teriyaki sauce

  • Zest & juice of 1 lime

  • 1 tbsp minced garlic

  • 1 tbsp minced ginger

  • 1 tsp sugar

  • 1 red chilli, finely sliced

  • 3 spring onions, sliced

  • 2 radishes, thinly sliced

  • 1 tbsp fresh coriander, chopped

  • 1 tsp sesame seeds

  • 1 Ice Gem or Romaine lettuce, separated into cups

  • Salt & pepper

Dipping Sauce

  • 1 tsp sugar

  • 1 tsp sesame oil

  • Juice of ½ lime

  • 2 tbsp soy sauce

  • 1 tsp fish sauce

  • 1 tbsp olive oil

Instructions

  • Crisp the beef.
    Season the mince. Heat 1 tbsp olive oil in a medium pan, fry the beef until crispy (5–7 minutes). Add 1 tbsp teriyaki, mix, then remove and set aside.

  • Build flavour.
    In the same pan add 1 tsp sesame oil, garlic, ginger, chilli, pinch of salt and 1 tsp sugar.
    Fry for 2–3 minutes.

  • Combine.
    Add the crispy mince back into the pan.
    Add soy sauce, fish sauce, 1 tbsp teriyaki, lime zest & juice.
    Stir in spring onions.

  • Assemble the cups.
    Spoon the beef into lettuce leaves.
    Garnish with coriander, radish, extra spring onion and sesame seeds.

  • Serve.
    Add a squeeze of fresh lime and a spoonful of dipping sauce. Enjoy!
