Asian Chicken Rice Bowl

Ingredients


For the chicken

  • 500g chicken mince

  • 1 tbsp garlic, minced

  • 1 tbsp ginger, minced

  • 1 red chilli, finely chopped

  • 2 tbsp soy sauce

  • 2 tbsp hoisin sauce

  • Salt & pepper, to taste

For the base

  • 1 packet 2-minute microwave coconut rice

For garnish

  • 1 tsp fresh chilli, sliced

  • 1 tsp spring onion, chopped

  • 1 tsp sesame seeds

  • 1 tsp fresh coriander

Instructions

  1. Heat a pan over medium heat. Add garlic, ginger, red chilli, and chicken mince. Cook for around 10 minutes until the chicken is fully cooked.

  2. Stir in the soy sauce and hoisin sauce, season with salt and pepper, and cook for another 2–3 minutes until coated and glossy.

  3. Warm the microwave coconut rice according to packet instructions.

  4. Serve the rice in bowls, top with the chicken mince, and finish with fresh chilli, spring onion, sesame seeds, and coriander.

  5. Grab a fork (or chopsticks) and tuck in!
