Slow Cooker Beef Curry Recipe

My Slow Cooker Beef Curry, the beef literally melts in your mouth in this recipe it's creamy it has a kick and it tastes delicious. The perfect Friday night curry, this one is a must try lets go:
Ingredients
- 1 large onion chopped
- 4 garlic cloves minced
- 1 tbsp ginger minced
- 1 bell pepper chopped
- 2 red chillies (add a third if you like it extra spicy)
- 3 tbsp madras curry paste (I used madras as I like the heat, you can use a milder curry paste if preferred)
- 1 tbsp cumin
- 1 tsp coriander powder
- 1 tbsp curry powder
- 2-3 curry leaves or 1-2 bay leaves
- 400ml coconut milk
- 125ml beef stock
- 1 tbsp tomato puree
- 1 tsp sugar
- 750g stewing beef
- 1 tbsp cornflour
- 1 tsp olive oil
Garnish
- Handful fresh coriander
- Freshly chopped chilli (optional)
Method
- In a pan brown off your beef in 1 tsp olive oil and 1 tbsp cornflour for 2-3 mins.
- Add to the slow cooker pot along with the rest of the ingredients, mix together and season well then cook for 4 hours on high or 8 hours on a low and you’re ready to tuck in. Serve with fluffy rice and a cold beer and enjoy!
