Slow Cooker Beef Curry Recipe

    My Slow Cooker Beef Curry, the beef literally melts in your mouth in this recipe it's creamy it has a kick and it tastes delicious. The perfect Friday night curry, this one is a must try lets go: 


    Ingredients

    • 1 large onion chopped 
    • 4 garlic cloves minced 
    • 1 tbsp ginger minced 
    • 1 bell pepper chopped 
    • 2 red chillies (add a third if you like it extra spicy)
    • 3 tbsp madras curry paste (I used madras as I like the heat, you can use a milder curry paste if preferred) 
    • 1 tbsp cumin 
    • 1 tsp coriander powder 
    • 1 tbsp curry powder 
    • 2-3 curry leaves or 1-2 bay leaves 
    • 400ml coconut milk 
    • 125ml beef stock 
    • 1 tbsp tomato puree 
    • 1 tsp sugar 
    • 750g stewing beef 
    • 1 tbsp cornflour 
    • 1 tsp olive oil 

    Garnish 

    • Handful fresh coriander 
    • Freshly chopped chilli (optional) 

    Method 

    • In a pan brown off your beef in 1 tsp olive oil and 1 tbsp cornflour for 2-3 mins. 
    • Add to the slow cooker pot along with the rest of the ingredients, mix together and season well then cook for 4 hours on high or 8 hours on a low and you’re ready to tuck in. Serve with fluffy rice and a cold beer and enjoy!
