Delicious Slow Cooker Madras Recipe

Ingredients

  • 600g chicken breast
  • 1 tbsp minced garlic
  • Zest and juice 1 lime
  • 150ml coconut milk
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 curry powder
  • 1 tbsp fish sauce

Dipping Sauce

  • 3 tbsp smooth peanut butter
  • 1 tsp rice wine vinegar
  • 50 ml coconut milk
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 2 tbsp soy sauce

Instructions

  • Soak the wooden skewers within water before use.
  • Add the chicken to the bowl and marinade with all the marinade ingredients then set aside.
  • Whilst the chicken is marinating, make the peanut dipping sauce by adding all the sauce ingredients into a bowl, mix together then on a low heat warm for 3-5 minutes until a thick glossy sauce has formed then allow to cook.
  • Thread the marinated chicken onto the wooden skewers and place in the air fryer at 180c for 10-12 minutes, turning every 5 minutes.
  • Remove from the air fryer, serve with the peanut dipping sauce and fresh spring onions and coriander. Enjoy!
