Air Fryer Satay Chicken Skewers 

Serves 3 makes | 277 calories and 48.8g protein per serving (2 skewers serving without dipping sauce) 

 

This is my healthy high protein air fryer Chicken Satay Skewers, perfect for a light meal or as a party appetiser this is a must try: Lets go 


Ingredients: 

Chicken Marinade:

  • 600g chicken breast 
  • 1 tbsp minced garlic 
  • Zest and juice 1 lime  
  • 150ml coconut milk 
  • 1 tbsp soy sauce 
  • 1 tbsp honey 
  • 1 curry powder 
  • 1 tbsp fish sauce  

Peanut dipping sauce: Serves 3 (120 calories and 4.2g protein per serving) 

  • 3 tbsp smooth peanut butter 
  • 1 tsp rice wine vinegar 
  • 50 ml coconut milk 
  • 1 tbsp fish sauce 
  • 1 tbsp sugar 
  • 2 tbsp soy sauce 

Method: 

  • Soak the wooden skewers within water before use. 
  • Add the chicken to the bowl and marinade with all the marinade ingredients then set aside. 
  • Whilst the chicken is marinating, make the peanut dipping sauce by adding all the sauce ingredients into a bowl, mix together then on a low heat warm for 3-5 minutes until a thick glossy sauce has formed then allow to cook. 
  • Thread the marinated chicken onto the wooden skewers and place in the air fryer at 180c for 10-12 minutes, turning every 5 minutes. 
  • Remove from the air fryer, serve with the peanut dipping sauce and fresh spring onions and coriander. Enjoy!
