Air Fryer Satay Chicken Skewers

Ingredients:
Chicken Marinade:
- 600g chicken breast
- 1 tbsp minced garlic
- Zest and juice 1 lime
- 150ml coconut milk
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 curry powder
- 1 tbsp fish sauce
Peanut dipping sauce: Serves 3 (120 calories and 4.2g protein per serving)
- 3 tbsp smooth peanut butter
- 1 tsp rice wine vinegar
- 50 ml coconut milk
- 1 tbsp fish sauce
- 1 tbsp sugar
- 2 tbsp soy sauce
Method:
- Soak the wooden skewers within water before use.
- Add the chicken to the bowl and marinade with all the marinade ingredients then set aside.
- Whilst the chicken is marinating, make the peanut dipping sauce by adding all the sauce ingredients into a bowl, mix together then on a low heat warm for 3-5 minutes until a thick glossy sauce has formed then allow to cook.
- Thread the marinated chicken onto the wooden skewers and place in the air fryer at 180c for 10-12 minutes, turning every 5 minutes.
- Remove from the air fryer, serve with the peanut dipping sauce and fresh spring onions and coriander. Enjoy!
