

Ingredients
- 75g spicy chorizo
- 2 bell peppers, chopped
- 1 large onion, chopped
- 4 garlic cloves, minced
- 1 red chilli, chopped
- 400g chopped tomatoes
- 600g chicken thighs, boneless and skinless
- 400g chickpeas, drained
- 2 large handfuls of spinach
- 1 tbsp smoked paprika
- 1 tsp cumin
- 2 bay leaves
- 75ml red wine
- 1 chicken stock cube
- 1 tsp sugar
Method
- Add all the ingredients into your slow cooker, season well, mix together well.
- Cook on high for 3 hours or on low for 5-6 hours.
- Garnish with coriander and fresh lemon, and serve with rice or potatoes. Enjoy!
