Spanish Chicken and Chorizo Stew (Slow Cooker Club Exclusive)

Ingredients

  • 75g spicy chorizo
  • 2 bell peppers, chopped
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1 red chilli, chopped
  • 400g chopped tomatoes
  • 600g chicken thighs, boneless and skinless
  • 400g chickpeas, drained
  • 2 large handfuls of spinach
  • 1 tbsp smoked paprika
  • 1 tsp cumin
  • 2 bay leaves
  • 75ml red wine
  • 1 chicken stock cube
  • 1 tsp sugar

Method

  1. Add all the ingredients into your slow cooker, season well, mix together well.
  2. Cook on high for 3 hours or on low for 5-6 hours.
  3. Garnish with coriander and fresh lemon, and serve with rice or potatoes. Enjoy!
