One Pan Peri Peri Chicken & Rice

Get some spice in your life with my One Pan Peri Peri Chicken & Rice, this is the perfect mid week dinner which takes under 30 minutes to make and is packed full of flavour. Lets go:
Ingredients:
- 2 bell peppers
- 1 large onion
- 1 tbsp garlic
- 150g dried long grain rice
- 250ml chicken stock
- 2 tbsp nando’s peri peri sauce
- 2 tbsp cayenne pepper
- 3 tbsp peri peri seasoning
- 1 red chilli
- 4 large chicken thighs
Garnish: (optional)
- 2-3 lemon wedges
- Handful fresh parsley
- Drizzle peri peri sauce
Method:
- Add the chicken, 1 tbsp cayenne pepper and 1 tbsp peri peri seasoning to a bowl season well and mix together then set aside.
- Add the chicken to a medium heat pan and cook off until the juices run clear for 7-10 minutes then remove from the pan.
- Add the onions, garlic and 1 tsp peri peri seasoning to the pan and cook off until softened. Add the peppers and chilli to the pan along with another 1 tsp peri peri seasoning cook for a further 5-10 minutes until the peppers are soft.
- Add the rice to the pan, stock and 1 tbsp peri peri seasoning and 1 tsp cayenne pepper, season well then add the chicken back to the pan and cook on low with lid on for 10-15 minutes until the rice is fully cooked through.
- Garnish with fresh parsley, a wedge of lemon add a further drizzle of peri peri sauce if desired. Enjoy!
