Chicken Madras (Slow Cooker Club Exclusive)

Ingredients

  • 600g chicken thighs 
  • 1 bell pepper 
  • 1 onion
  • 1 tbsp minced garlic 
  • 1 tbsp minced ginger
  • 1 tsp coriander 
  • 1 tsp cumin 
  • 1-2 red chillies (more if you like it extra hot)
  • 1 tsp garam masala 
  • 1 tsp turmeric 
  • 1 tsp chilli powder 
  • 2-3 bay leaves 
  • 3 tbsp madras paste 
  • 400g chopped tomatoes 
  • 100ml chicken stock (from a cube is fine) 
  • 1 tbsp creme fraiche 

Garnish

  • Fresh coriander 
  • Fresh chilli

Method

  1. Add all the ingredients to the slow cooker season well and cook for 4 hours on a high or 8 hours on a low. 
  2. 10 minutes before serving add creme fraiche.
  3. Garnish with coriander and fresh chilli then tuck in, enjoy.
