Delicious Hot Honey Cottage Cheese, Avocado & Jammy Egg Toast Recipe

Ingredients

  • 1 slice wholegrain sourdough bread
  • 120g low-fat cottage cheese
  • 1 large egg
  • 40g avocado
  • Juice of ½ lemon
  • ¼ tsp olive oil
  • 2 tbsp fresh parsley, finely chopped
  • 1 spring onion, finely sliced
  • 1 tbsp honey
  • Chilli flakes, to taste
  • Salt & black pepper

Instructions


1.  Bring a small pan of water to the boil. Carefully lower in the egg and cook for 6–7 minutes until the yolk is jammy. Transfer to cold water and peel.


2. Mash together the avocado, lemon juice, olive oil, parsley and a pinch of salt and pepper until combined.


3.  Toast the sourdough until golden and crisp.


4. Spread the avocado mixture over the toast, followed by the cottage cheese.


5. Slice the jammy egg in half and place on top of the cottage cheese.


6. Mix the honey with chilli flakes to your preferred spice level and drizzle over the egg.


7. Sprinkle with spring onions, an extra pinch of black pepper and enjoy immediately.
