Slow Cooker Brazilian Pork Stew Recipe

Get a flavour of Brazil with my Slow Cooker Brazilian Pork Stew, adapted from the @goodfood delish version. This is a simplified take on the classic Brazilian feijoada dish, it's rich, smokey and tastes delicious. Lets go:
Ingredients:
- 1 red pepper
- 1 large onion
- 1 red chilli
- 5 garlic cloves minced
- 50ml orange juice
- 700g pork shoulder
- 150g bacon
- 1 tbsp olive oil
- 1 tbsp corn flour
- 3 bay leaves
- 1 beef stock cube
- 2 tbsp red wine vinegar or white wine vinegar
- 400g chopped tomatoes
- 1 tbsp cumin
- 1 tbsp oregano
- 1 tbsp ground coriander
- 1 tbsp cocoa powder
- 1 tbsp brown sugar
- 400g black beans
- 1 tbsp coriander (garnish)
Method:
- Add 1 tbsp olive oil to the pan add bacon and cook for 2-3 minutes until crispy on medium heat, remove from the pan then add pork and 1 tbsp cornflour and brown off for 3-5 minutes.
- Add the bacon and browned off pork to the slow cooker and the rest of the ingredients cook for 4 hours on a high or 8 hours on a low.
- 30 minutes before serving add the black beans then you’re ready to serve, serve with fresh coriander and rice. Enjoy!
