Slow Cooker Brazilian Pork Stew Recipe

Get a flavour of Brazil with my Slow Cooker Brazilian Pork Stew, adapted from the @goodfood delish version. This is a simplified take on the classic Brazilian feijoada dish, it's rich, smokey and tastes delicious. Lets go: 


Ingredients:

  • 1 red pepper 
  • 1 large onion 
  • 1 red chilli 
  • 5 garlic cloves minced
  • 50ml orange juice 
  • 700g pork shoulder 
  • 150g bacon 
  • 1 tbsp olive oil 
  • 1 tbsp corn flour 
  • 3 bay leaves 
  • 1 beef stock cube 
  • 2 tbsp red wine vinegar or white wine vinegar 
  • 400g chopped tomatoes 
  • 1 tbsp cumin 
  • 1 tbsp oregano 
  • 1 tbsp ground coriander 
  • 1 tbsp cocoa powder 
  • 1 tbsp brown sugar 
  • 400g black beans 
  • 1 tbsp coriander (garnish) 

Method: 

  • Add 1 tbsp olive oil to the pan add bacon and cook for 2-3 minutes until crispy on medium heat, remove from the pan then add pork and 1 tbsp cornflour and brown off for 3-5 minutes. 
  • Add the bacon and browned off pork to the slow cooker and the rest of the ingredients cook for 4 hours on a high or 8 hours on a low.
  • 30 minutes before serving add the black beans then you’re ready to serve, serve with fresh coriander and rice. Enjoy!
