Honey Mustard Sausage Traybake

This is my quick and easy honey mustard sausage traybake, the perfect midweek dinner. Let’s go:


Ingredients:

  • 400g baby potatoes 

  • 2 large carrots 

  • 4 garlic cloves, skin on

  • 1 onion 

  • 2 tbsp Italian seasoning

  • 1 tbsp olive oil 

  • 10 pork sausages 

  • 2 tbsp clear honey 

  • 1 tbsp Dijon mustard 

Method

  • Add all the vegetables to a tray, season with 1 tbsp Italian seasoning, salt, and pepper, then mix together.

  • Place the sausages on top, sprinkle with the remaining 1 tbsp Italian seasoning, drizzle with olive oil, and bake at 180°C for 45 minutes.

  • Once cooked, mix together the honey, Dijon mustard, and a dash of water. Drizzle over the sausages, garnish with fresh parsley, and tuck in. Enjoy!
