Honey Mustard Sausage Traybake

This is my quick and easy honey mustard sausage traybake, the perfect midweek dinner. Let’s go:
Ingredients:

400g baby potatoes

2 large carrots

4 garlic cloves, skin on

1 onion

2 tbsp Italian seasoning

1 tbsp olive oil

10 pork sausages

2 tbsp clear honey

1 tbsp Dijon mustard
Method

Add all the vegetables to a tray, season with 1 tbsp Italian seasoning, salt, and pepper, then mix together.

Place the sausages on top, sprinkle with the remaining 1 tbsp Italian seasoning, drizzle with olive oil, and bake at 180°C for 45 minutes.

Once cooked, mix together the honey, Dijon mustard, and a dash of water. Drizzle over the sausages, garnish with fresh parsley, and tuck in. Enjoy!
