Slow Cooker Lamb & Potato Curry

This is my Slow Cooker Lamb & Potato Curry, a classic for a reason that will rival any take out version and it’s half the calories! Let’s go: 


Ingredients:

600g lamb shoulder 

400g potatoes 

1 onion 

1 red chilli 

1 tbsp minced ginger 

1 tbsp minced garlic 

2 bay leaves 

1 tbsp garam masala 

1 tbsp curry powder 

1 tbsp cumin 

1 tsp turmeric 

1 tbsp chilli powder 

4 cardamom pods 

400g chopped tomatoes 

1 tin 400g coconut milk 


Method: 

  • Add all the ingredients to the slow cooker, season well with salt and pepper, mix together then cook on high for 4 hours or on low for 8. 

  • Served with fluffy rice and a cold beer, enjoy!
