One Pan Creamy Tarragon Chicken Recipe

Ingredients

  • 1kg chicken thighs

  • 1 onion, sliced

  • 5 garlic cloves, sliced

  • 200ml chicken stock

  • 150g mushrooms

  • 150ml single cream

  • 1 tsp olive oil

  • 1 tbsp Dijon mustard

  • 1 tbsp mixed herbs

  • 3 tbsp fresh tarragon, chopped

Instructions

Cook the chicken
Add olive oil to a pan over medium heat. Add the chicken thighs, season well and cook for 15–20 minutes until golden, crispy and cooked through. Remove and set aside.


Sauté the vegetables
In the same pan, add the onion, garlic, mushrooms and mixed herbs. Cook for 5–7 minutes until softened.


Make the sauce
Pour in the chicken stock, Dijon mustard and single cream. Stir well to combine.


Add the tarragon
Sprinkle in the fresh tarragon and season to taste.


Finish the dish
Return the chicken to the pan and simmer on low for 5 minutes until everything is heated through and coated in the sauce. Garnish with extra fresh tarragon and serve with creamy mash or greens.
