One Pan Creamy Mustard Chicken Recipe

This one pan creamy mustard chicken is the perfect dinner for when you’re wanting a super quick one pot that not only tastes delicious but looks the part too. Lets go: 


Ingredients
  • 1 onion chopped 
  • 125g mushrooms chopped 
  • 3 garlic cloves chopped
  • 2 handfuls spinach 
  • 150ml chicken stock 
  • 200ml single cream 
  • 1 tbsp dijon mustard 
  • 1 tsp honey 
  • 8 chicken thighs (sustainably sourced where possible)
  • 1 tbsp fresh tarragon 
  • 1 tsp olive oil 
Method
  • On a medium heat add 1 tsp olive oil to the pan, and add your chicken thighs to the pan season well and cook off for 5-10 mins until the skin is nice and crispy. 
  • Remove the chicken from the pan, add chopped onions, garlic, mushroom and splash of water to the pan brown off for 5 minutes. 
  • Add the stock to the pan and bring to a simmer then turn to low-medium and add the single cream to the pan. Add the dijon mustard, fresh tarragon, and 1 tsp honey, give it a mix and then season to taste. 
  • Add fresh washed spinach and let it wilt down for 2-3 minutes, add the cooked off chicken back to the pan along with all the juices, bring to simmer for 3-5 minutes and then you’re ready to serve. Garnish with fresh parsley and tuck in, enjoy.
