Crispy Roast Potatoes with Herby Tahini Dressing

Ingredients

  • 1.2–1.5kg potatoes (Maris Piper ideal)

  • 2 tbsp olive oil

  • 1–2 tbsp cornish sea salt roasting seasoning (or salt + 1 tsp mixed dried herbs)

  • 2–3 tbsp 'All Dressed Up' tahini and lime dressing (or 2 tbsp tahini mixed with juice 1 lime) 

Garnish

  • 2 tbsp fresh parsley, chopped

  • 2 tbsp fresh dill, chopped

Instructions

1. Parboil the potatoes
Peel and chop the potatoes into medium-sized chunks. Add to a pot of salted boiling water and cook for 10-15 minutes until parboiled and fork tender.

2. Rough up the edges
Drain the potatoes, then gently shake them in the sieve to fluff up the edges. Leave to steam dry for 5 minutes.

3. Air fry until crispy
Preheat your air fryer to 200°C. Add the potatoes along with olive oil and seasoning. Toss well.

Cook for 25–30 minutes, shaking halfway through, until golden and crispy.

4. Finish the dish
Transfer to a serving bowl, toss with fresh parsley and dill, then drizzle over the tahini dressing.

5. Serve and enjoy
Season to taste and serve immediately while crispy.
