Creamy Tarragon Chicken

This is my One Pan Creamy Tarragon Chicken, so easy to make and packed full of flavour this crowd pleaser is a must try. Lets go:
Ingredients:
- 1kg chicken thighs
- 1 onion
- 5 cloves garlic sliced
- 200ml Chicken stock
- 150g closed mushrooms
- 150ml Single cream
- 1 tsp olive oil
- 1 tbsp dijon mustard
- 1 tbsp mixed herbs
- 3 tbsp fresh tarragon
Method:
- Add 1 tsp olive oil to the pan, and add the chicken to the pan season well then cook off for 20 minutes until juices run clear and the skin is nice and crispy then remove from the pan.
- Add onions, garlic, mushrooms and 1 tbsp mixed herbs to the pan and sautee until softened for 5-7 minutes.
- Once softened add the stock, mustard and single cream to give that a good stir and then sprinkle in the chopped fresh tarragon and season to taste.
- Add the cooked chicken back to the pan and cook for 5 minutes on low.
- Garnish with fresh tarragon and serve on a bed of creamy mash. Enjoy!
