Creamy Lemon & Dill Smoked Salmon Pasta

This is my Creamy Lemon & Dill Smoked Salmon Pasta, the perfect elegant mid week dinner. So simple to put together this one is a must try. Lets go:
Ingredients:
- 1 tbsp olive oil
- Juice 1 lemon and zest
- 100g soft cream cheese
- 75g uncooked spaghetti per person
- 2 tbsp lighter creme fraiche
- 100g smoked salmon sliced
- 1 tbsp garlic chopped
- 1 small onion chopped
- 1 bunch fresh dill chopped
Method:
- Add a pinch of salt to a pan of boiling water and cook the spaghetti until al dente.
- Whilst the pasta is cooking on a medium heat add 1 tbsp olive oil to a pan, add the garlic and onions and sauté until softened for 5 minutes.
- Lower the heat add soft cheese and 2 tbsp creme fresh, lemon juice and half the zest, season well and mix together until combined.
- Turn off the heat, add the smoked salmon to the pan, add the cooked pasta along with a dash of the pasta water season well and add the chopped dill and remaining lemon zest.
- Serve with extra fresh dill on top and a few wedges of lemon, tuck in and enjoy.
