Delicious Chipotle Steak Bowl Recipe

Ingredients

Steak

  • 2 sirloin or flank steaks

  • 1 tbsp chipotle marinade

  • 1 tsp olive oil

  • Salt & pepper

Bowl Base

  • 1–2 packets Mexican grains or rice

  • 1 tsp crumbled feta

  • Slice of lime

  • Fresh coriander

  • Sliced green jalapeños (optional)

Tangy Lime Slaw

  • ¼ red cabbage, finely sliced

  • 1 small onion, thinly sliced

  • 3–4 radishes, thinly sliced

  • Small handful coriander or parsley, chopped

  • Juice and zest of 1 lime

  • ¼ jalapeño, thinly sliced

  • 1 tsp sugar

  • 1 tsp cumin

  • Salt & pepper

Instructions


Make the slaw
Add all slaw ingredients to a bowl, mix well and set aside to allow the flavours to develop.

Cook the steak
Season the steak well, then cook in a hot pan with olive oil. For medium-rare, cook for 2 minutes each side, then rest for at least 5 minutes before slicing.

Prepare the base
Cook your rice or grains according to packet instructions.

Assemble the bowl
Layer your rice, sliced steak and slaw. Top with feta, coriander, lime and jalapeños.

Serve and enjoy
Finish with an extra squeeze of lime and tuck in.
