SWAPS + UPGRADES
- Lighter touch: Use 5% lean diced beef and spray the filo with a little olive oil instead of brushing with egg for a leaner option.
- Pastry switch: No filo? Puff pastry works too — just adjust the baking time for a golden rise.
- Add greens: Toss in a handful of spinach or kale to the beef mix right before assembling for a sneaky vitamin boost.
Frequently Asked Questions
What pastry does Greggs use for steak bakes?
Greggs typically uses puff pastry. For a lighter option at home, this recipe uses filo pastry — still flaky and golden, but much lower in calories and fat.
Is a homemade steak bake healthier than Greggs?
Absolutely. This homemade Greggs-style steak bake is high in protein (40g per serving), lower in fat, and free from unnecessary preservatives. It’s a fakeaway you can feel good about.
Can I make Greggs-style steak bakes in the air fryer?
Yes! After assembling, pop them in the air fryer at 180°C for 10–15 minutes until crispy and golden. Just keep an eye on the pastry so it doesn’t over-brown.
Can you freeze homemade steak bakes?
Definitely. Let the baked bakes cool fully, wrap individually, and freeze. Reheat in the oven or air fryer for best texture.
What beef should I use for steak bakes?
Diced stewing beef or braising steak works perfectly. It breaks down beautifully in the slow cooker and gives you that melt-in-your-mouth filling.
Can I make this steak bake gluten free?
You can! Just use gluten-free pastry and double-check your stock and sauce ingredients. The filling itself is naturally gluten free.
Are homemade steak bakes good for meal prep?
Yes! These bakes are ideal for prepping ahead. Make a batch, store in the fridge or freezer, and reheat as needed for a high-protein, ready-to-go meal.
How many calories are in a homemade steak bake?
This recipe comes in at 599 calories per bake , with a massive 40g of protein — perfect for keeping you full and on track with your goals.
