Delicious Slow Cooker Herby Leg of Lamb Recipe

Ingredients

Lamb

  • 1.3kg half leg of lamb

  • 1 tbsp mixed herbs

  • 1 tbsp olive oil

Slow Cooker Base

  • 1 red pepper, sliced

  • 2 red onions, sliced

  • 4 garlic cloves, minced

  • 1–2 large potatoes, roughly chopped

  • 1 tbsp oregano

  • 1 tbsp thyme

  • 1 tbsp rosemary

  • Juice of ½ lemon

  • 200ml lamb or beef stock

  • 1 tbsp cornflour mixed with 1 tbsp water

To Finish

  • 50g feta cheese (optional)

  • 1 tsp fresh mint

Instructions

1. Prepare and sear the lamb
Season the lamb with mixed herbs, oregano, thyme, salt and pepper, then drizzle with olive oil. Sear in a hot pan for 5 minutes until browned on all sides.

2. Build the slow cooker base
Add the peppers, onions, garlic, potatoes, herbs, lemon juice, stock and cornflour mixture to the slow cooker. Season well and mix.

3. Slow cook
Place the seared lamb on top. Cook on low for 6–7 hours or high for 4 hours until the lamb is tender and falling apart.

4. Finish and serve
Crumble over feta and sprinkle with fresh mint before serving.
