Slow Cooker Creamy Chicken Satay Curry Recipe

Satay lovers, this ones for you, my Creamy Chicken Satay Curry, this curry is packed full of flavour and truly a must try if you love Malaysian style curries. Lets go: 


Ingredients:

  • 1 large onion 
  • 600g chicken thighs chopped 
  • 1 tbsp minced ginger 
  • 1 tbsp minced garlic 
  • 3 tbsp smooth peanut butter 
  • 400g full fat coconut milk 
  • Juice of 1/2 lime 
  • 1 chicken stock cube crumbled 
  • 1 tbsp soy sauce 
  • 1 tbsp curry powder 
  • 1 tsp chilli powder 
  • 1 tsp sugar 
  • 1 red chilli 

Method: 

  • Add all of the ingredients to the slow cooker, season well, mix together and cook on high for 4 hours or on low for 8 hours. 
  • Garnish with coriander, chilli and crumbled peanuts and tuck in, enjoy!
