Slow-Cooker Beef & Ale Dumpling Stew Recipe

Ingredients
- 900g stewing beef
- 180g bacon
- 1 tsp olive oil
- 3 carrots chopped
- 2 onions chopped
- 2 celery sticks chopped
- 3 garlic cloves
- 1 tbsp Dijon mustard
- 1 tbsp tomato puree
- 2 tbsp corn flour
- 2 tbsp Henderson’s relish or Worcestershire relish
- 2 bay leaves
- Sprig of thyme
- 200ml beef stock
- 500ml ale (I used @kewgarden ale)
- 1 tbsp freshly chopped parsley
Dumplings: (78 cal per dumpling)
- 220g all purpose flour
- 2 tsp baking powder
- 1/2 salt
- 1 tbsp butter softened
- 1 tbsp freshly chopped parsley
- 100ml milk
Method:
- To a medium heat pan add your olive oil and in batches brown off your beef with 1 tbsp cornflour and set aside, in the same pan add your bacon cook until crispy then set aside.
- Add the browned beef and bacon to your slow cooker along with the rest of the ingredients. Cook on high for 4 hours or on low for 8 hours, 30 mins before serving add your dumplings (see below method) sprinkle some fresh parsley on top and tuck in. Enjoy!
Dumplings: Makes 8 (78 cal per dumpling)
- Combine flour, baking powder and salt into bowl, add your softened butter and blend together, stir in your milk until a wet dough has formed. It should be a thick dough but thin enough to drop from a wet spoon.
- Add to the stew and cook 5-10 mins uncovered then 20 mins covered.
