Lemon & Garlic Green Beans with Buffalo Mozzarella

Lemon & Garlic Green Beans with Buffalo Mozzarella
Ingredients
1 large packet French green beans
1 tbsp garlic, minced
Juice and zest of 1 lemon
1-2 balls buffalo mozzarella
1 tsp olive oil
Optional Garnish
1 tsp almonds, chopped
1 tsp chilli flakes
Instructions
1. Cook the green beans
Top and tail the green beans, then add to salted boiling water. Cook for 5–7 minutes until tender but still slightly crisp.
2. Sauté the beans
Drain the beans and add them to a hot pan with olive oil. Sauté for 3–5 minutes.
3. Add flavour
Stir in the minced garlic, lemon juice and zest. Cook for another minute until fragrant.
4. Assemble the dish
Tear the buffalo mozzarella onto a serving plate. Spoon the warm green beans over the top.
5. Finish and serve
Sprinkle with chilli flakes and almonds (if using), drizzle with olive oil and serve immediately.
