Slow Cooker Mexican Beef Tacos

These are my juicy, melt-in-your-mouth Slow Cooker Mexican Beef Taco, perfect for batch cooking or meal prep for the week.
Ingredients:
1.2kg beef brisket
100ml beef stock
Sauce:
2 tbsp chipotle sauce
Juice of 1 lime
1 tbsp cumin
1 tbsp smoked paprika
1 tbsp minced garlic
1 red chili (optional)
1 onion
100ml beef stock
Taco Toppings:
12 mini tacos
1-2 tbsp tomato salsa per taco
1-2 tbsp fresh coriander per taco
1-2 tsp salsa verde sauce per taco
Method:

Season the brisket with salt and pepper, then sear it in a pan over medium heat for 2-3 minutes on each side.

Blend all the sauce ingredients until smooth, or add them directly to the slow cooker for a chunkier sauce.

Place the seared brisket and sauce in the slow cooker, along with 100 ml beef stock. Cook on low for 8 hours.

Shred the beef, then assemble the tacos with the garnishes and enjoy!
