The classic Irish Beef & Guinness Stew, this is my slow cooker version its rich, it's deep in flavour and tastes delicious, literally comfort in a pot! Lets go: 


Ingredients 

  • 700g beef diced 
  • 150g bacon diced 
  • 2 medium onions sliced 
  • 500ml Guinness 
  • 250ml Beef Stock 
  • 3 garlic cloves minced 
  • 1 large potato roughly chopped 
  • 2 medium carrots chopped
  • 1 celery stalks chopped 
  • 1 tbsp tomato puree 
  • 3 tbsp hendersons sauce or Worcestershire sauce 
  • 1 tsp rosemary 
  • 1 tsp thyme 
  • 2 bay leaves 
  • 1 tsp olive oil
  • 1 tbsp cornstarch 
  • Garnish: Fresh thyme (optional) 

Method

  • Add 1 tsp olive oil to a medium heat pan, add your beef and cornstarch and brown off for 5 minutes then set aside. To the same pan add the bacon, brown off and set aside. 
  • Add the rest of the ingredients to the slow cooker pot, add the browned off beef and bacon, mix together then cook on high for 4 hours or low 8 hours. Serve with creamy mash and enjoy.
