Slow Cooker Coconut Chicken Curry 


Serves 4 430 calories | 35g protein per serving 


This is my South Indian-style Slow Cooker Coconut Chicken Curry. If you love anything coconut-based, you’ll love this curry. So easy to make, it’s one of my new favourites. 


Ingredients: 

- 600g chicken thighs  

- 2 red chillies  

- 1 onion  

- 400ml full-fat coconut milk  

- 75ml chicken stock 

- 1 tbsp fresh ginger minced 

- 5 garlic cloves, minced  

- 1 tbsp chilli powder  

- 4 curry leaves (can substitute with lime zest and bay leaves) 

- 1 tsp turmeric  

- 1 tbsp garam masala  

- 1 tsp cinnamon  

- 4 cardamom pods  

- 1 tsp fennel seeds  


Method:

1. Add all the ingredients to the slow cooker, season well with salt and pepper, then cook on high for 3 hours or low for 4-5 hours.  

2. Garnish with fresh coriander, serve with fluffy white rice, enjoy!
