High Protein Chicken and Chorizo Bake Recipe

This is my high protein chicken and chorizo bake, low cost easy to make and an absolute crowd pleaser. If you’re searching for a pasta bake that’s high in protein this recipe will have you covered. Lets go:
Ingredients:
- 1 large onion finely chopped
- 1 yellow pepper thinly sliced
- 1 red chilli finely sliced
- 3 large garlic cloves finely sliced
- 150g uncooked penne pasta
- 55g chorizo
- 450g chicken thighs
- 200g chopped tinned tomatoes
- 1 tbsp smoked paprika
- 30g lighter mature cheddar grated
- 1 ball lighter mozzarella cheese torn into small pieces
- 2 tbsp cajun seasoning
- 1 tsp olive oil
- 1 tbsp chopped fresh parsley or basil (optional garnish)
Method:
- Preheat your oven to 180c.
- On a medium heat add 1 tsp olive oil to a pan, add your chicken and 1 tbsp cajun seasoning. Cook off for 5-7 minutes then set aside.
- Whilst the chicken is cooking, cook your pasta according to packaging.
- Add the chorizo to the pan and cook for 2-3 minutes then add onions, pepper, garlic, red chilli, smoked paprika and cajun seasoning. Season then cook off for 5-7 minutes until softened.
- Add the chicken back to the pan along with 200g chopped tomatoes, add the cooked pasta season and mix together.
- Transfer the chicken chorizo pasta into an ovenproof dish, sprinkle over the grated cheese and torn mozzarella season well and add a drizzle of olive oil on top.
- Place in an oven cook at 180c for 25-30 mins until the cheese has fully melted and you’re ready to serve. Garnish with parsley and a drizzle of olive oil and tuck in. Enjoy!
