Tuscan Chicken & Orzo One Pot Recipe

Ingredients
- 6 chicken thighs - sustainably sourced where possible
- 1 tbsp paprika
- 1 tbsp Italian mixed herbs
- 200g dried orzo
- 600ml chicken stock (until orzo if fully covered)
- 1 tbsp garlic chopped
- 1 large onion chopped
- 1 tsp Dijon mustards
- 2 tbsp lighter creme cheese
- Handful baby spinach
- 1 tsp olive oil
- Garnish:
- Drizzle fresh lemon
- 1 tbsp chopped basil
Method
- Marinade your chicken with paprika, Italian herbs, light drizzle olive oil and salt and pepper
- Add your chicken to a pan and cook skin side down on low to medium heat for 3-5 mins until nice and crispy then flip over and cook for further 15 mins until nicely browned all over then set aside.
- Add the onions, garlic to the pan and cook for 3-5 mins until softened then add the orzo to the pan.
- Add 600ml chicken stock and let that simmer down for 10 mins, then add the creme cheese and dijon mustard and season well (add more stock if you’d like it more creamier/wetter). Cook for a further few mins then add the fresh spinach and let this wilt down for a few minutes.
- Add the cooked chicken back to the pan and let this heat back up for a few mins then you’re ready to serve. Garnish with a drizzle fresh lemon and chopped fresh basil, tuck in and enjoy.
