Spanish Chicken & Chorizo Traybake Recipe

My Spanish chicken & chorizo traybake, coming in at 504 calories and 35.1g protein this traybake is a must try if you want a quick high protein midweek meal that doesn’t compromise in flavour. Let’s go:
Ingredients
- 1 Red Bell Pepper
- 1 Yellow Bell Pepper
- 3 small red onions
- 3 garlic cloves
- 250g Jersey royal potatoes
- 80g spicy chorizo
- 200g cherry tomatoes
- 1kg chicken thighs (sustainably sourced where possible)
- Handful fresh parsley
- Juice half a lemon
- Drizzle olive oil
- 2 tbsp smoked paprika
Method
- Add chicken, 1 tbsp smoked paprika, juice half lemon, drizzle olive oil, handful fresh parsley salt and pepper to a bowl mix together and set aside.
- Add the rest of the ingredients to your tray, 1 tbsp paprika drizzle olive oil season well then mix together, layer the marinated chicken on top and sprinkle on remaining fresh parsley.
- Place in an oven at 180c for 45 mins until the chicken is cooked through and crispy on the outside.
- Serve with a cold glass of white wine and enjoy.
