Spanish Chicken & Chorizo Traybake Recipe

My Spanish chicken & chorizo traybake, coming in at 504 calories and 35.1g protein this traybake is a must try if you want a quick high protein midweek meal that doesn’t compromise in flavour. Let’s go: 


Ingredients

  • 1 Red Bell Pepper 
  • 1 Yellow Bell Pepper 
  • 3 small red onions 
  • 3 garlic cloves 
  • 250g Jersey royal potatoes 
  • 80g spicy chorizo 
  • 200g cherry tomatoes 
  • 1kg chicken thighs (sustainably sourced where possible) 
  • Handful fresh parsley 
  • Juice half a lemon 
  • Drizzle olive oil 
  • 2 tbsp smoked paprika 

Method 

  • Add chicken, 1 tbsp smoked paprika, juice half lemon, drizzle olive oil, handful fresh parsley salt and pepper to a bowl mix together and set aside. 
  • Add the rest of the ingredients to your tray, 1 tbsp paprika drizzle olive oil season well then mix together, layer the marinated chicken on top and sprinkle on remaining fresh parsley.
  • Place in an oven at 180c for 45 mins until the chicken is cooked through and crispy on the outside. 
  • Serve with a cold glass of white wine and enjoy.
