Slow Cooker Smoky Mexican Chicken Stew

This is my Smoky Slow Cooker Mexican Stew, packed full of flavour this really is comfort in a bowl and a must try. Under 450 calories and over 40g protein per serving a great low calorie high protein option too, let’s go:
Ingredients:
- 1 onion
 - 1 tbsp garlic
 - 1 bell pepper
 - 1 red chilli
 - 600g chicken thighs
 - 1 tbsp smoked paprika
 - 1 tbsp cumin
 - 1 tsp ground coriander
 - 1 tsp oregano
 - 1 tsp sugar
 - 1 tbsp chipotle paste
 - 400g red kidney beans
 - 400g chopped tomatoes
 - 50ml chicken stock
 - 2 bay leafs
 
Garnish: (optional)
- Freshly chopped coriander
 - Half avocado chopped
 
Method:
- Add all of the ingredients into the slow cooker, cook for 4 hours on high or 6-7 hours on low, 20 mins before serving, add in the kidney beans then you’re ready to tuck in. Serve with fresh coriander and chopped avocado, enjoy!
