Slow Cooker Smoky Mexican Chicken Stew

This is my Smoky Slow Cooker Mexican Stew, packed full of flavour this really is comfort in a bowl and a must try. Under 450 calories and over 40g protein per serving a great low calorie high protein option too, let’s go: 

Ingredients: 

  • 1 onion 
  • 1 tbsp garlic 
  • 1 bell pepper 
  • 1 red chilli 
  • 600g chicken thighs 
  • 1 tbsp smoked paprika 
  • 1 tbsp cumin 
  • 1 tsp ground coriander 
  • 1 tsp oregano 
  • 1 tsp sugar 
  • 1 tbsp chipotle paste 
  • 400g red kidney beans 
  • 400g chopped tomatoes 
  • 50ml chicken stock 
  • 2 bay leafs 

Garnish: (optional) 

  • Freshly chopped coriander 
  • Half avocado chopped 

Method: 

  • Add all of the ingredients into the slow cooker, cook for 4 hours on high or 6-7 hours on low, 20 mins before serving, add in the kidney beans then you’re ready to tuck in. Serve with fresh coriander and chopped avocado, enjoy!
