Slow Cooker Hungarian Beef Goulash Recipe

This is my slow cooker version of the classic Hungarian Goulash, its hearty and packed full of flavour. Coming in at 474 calories and 63.7g protein per serving this is a great low calorie high protein option too. Lets go:   


Ingredients:

  • 700g stewing beef 
  • 1 large potato 
  • 2 medium onions 
  • 1 large carrot chopped 
  • 2 bell peppers 
  • 4 garlic cloves 
  • 1 tbsp olive oil 
  • 1 tbsp cornstarch 
  • 2 bay leaves
  • 1 400g tinned tomatoes 
  • 400ml beef stock 
  • 2 tbsp smoked paprika 
  • 1 tbsp hot paprika 
  • Handful fresh parsley 

Method:

  • Add 1 tsp olive oil to a medium heat pan, add your beef and cornstarch and brown off for 5 minutes then set aside. 
  • Add the rest of the ingredients to the slow cooker pot, add the browned off beef and bacon, mix together then cook on high for 4 hours or low 8 hours. Garnish with fresh parsley and serve with creamy mash, enjoy.
