Slow Cooker Harissa Chicken Stew Recipe

This is my Slow Cooker Harissa Chicken Stew, packed full of flavour, under 500 calories and nearly 40g protein per serving, what’s not to love? Lets go: 


Ingredients:

  • 1 large onion 
  • 3 garlic cloves 
  • 1 red chilli 
  • 100g harissa paste (3 tbsp) 
  • 1 tbsp zaatar seasoning 
  • 1 tbsp smoked paprika 
  • 600g chicken thighs 
  • 1 chicken stock cube crumbed 
  • 1 tsp sugar 
  • 2 bell peppers 
  • 400g tin chopped tomatoes 
  • 400g chickpeas 
  • 2 large handfuls fresh spinach  

Method: 

  • Add all the ingredients to the slow cooker bar the chickpeas and spinach, season well then cook for high 3-4 hours or low 6-7 hours. 
  • 20 minutes before serving add the chickpeas and spinach to the slow cooker then you’re ready to serve. Serve with rice or couscous and enjoy.
