This slow cooker chicken curry could rival any decent takeaway chicken curry, its creamy its tender and tastes absolutely delicious, I beg you to try this one. Coming in at 431 calories and 39.2g protein per serving this is a great low calorie high protein option too. Lets go:

 

Ingredients: 

  • 4 garlic cloves chopped 
  • 2 medium onions chopped 
  • 1 green chilli thinly sliced (if you like it hot add 2 more chillis in) 
  • 1 thumb piece ginger grated 
  • 700g skinless chicken thighs cut into pieces 
  • 400ml can coconut milk 
  • 400ml can chopped tomatoes 
  • 1 tbsp tomato purée 
  • 2 bay leaf 
  • 1 tsp cumin 
  • 1 tsp ground coriander 
  • 1 tbsp garam masala
  • 1 tsp turmeric 
  • Handful fresh coriander (garnish) 
  • Half red chilli thinly sliced (garnish) 

Method: 

  • Add all the ingredients to your slow cooker, cook on high for 4 hours or low 6-8 hours. Serve with fluffy rice and a cold beer and enjoy.
