Slow Cooker Chicken Coq Au Vin Recipe

This is my slow cooker version of the French classic Coq Au Vin, serve with creamy mash and French green beans and it will be your families next favourite midweek dinner. Lets go:
Ingredients
- 250g chestnut mushrooms
- 1 tbsp minced garlic
- 1 large carrot
- 1 large onion chopped
- 6 chicken thighs bone and skin on
- 1 tsp olive oil
- 200ml red wine
- 200ml chicken stock
- 2 tbsp tomato paste
- 1 tbsp corn flour mixed with 1-2 tbsp water
- 3 bay leaves
- 2-3 sprigs thyme
Method:
- To a medium heat pan add chicken thighs season well then braise for 5 mins until lightly brown and the skin is crispy then remove from the pan.
- Add the rest of the ingredients to the slow cooker and add chicken thighs and juices from the pan. Season well give it a good mix then cook for 3-4 hours on a high or 6-7 hours on low.
- Serve with creamy mash and a nice glass of red wine, enjoy.
